Northern Italian Chicken Cacciatore

  • 2 chicken breasts, boneless, skinless, cut bite size
  • 1 tablespoon dried oregano
  • ½ teaspoon dried basil
  • 5 cups water or chicken stock
  • 3 garlic cloves, chopped
  • ½ lb capellini, cooked, drained
  • ½ cup grated parmesan cheese

Recipe cooking method

  • Place chicken in large non-stick skillet with ½ cup water or chicken stock. Cover. Cook over low heat until chicken is light brown. Add garlic cloves, oregano, basil
  • Add the rest of water or chicken stock (4-1/2 cups).
  • Simmer for at least 30-40 minutes, until chicken is done
  • -Place the hot cooked capellini in a large, low pasta bowl
  • -Pour the brown sauce from the skillet with the cooked chicken over the cooked capellini.
  • Sprinkle on the grated cheese and mix altogether lightly
  • This is another family generation recipe.
