Salad

  • 1 cup each of lettuce, escarole, spinach washed, shredded
  • 1 fresh tomato, cut in small wedges
  • ½ cucumber, peeled, sliced
  • ¼ cup canned chickpeas, rinsed
  • 2 oz. low fat Swiss cheese, cut in bite size cubes
  • Place altogether in large salad bowl. Toss well
